Winter Minnestrone
Ingredients- ¼ cup extra virgin olive oil
- 1 qt. Chicken Broth
- 2 medium roughly chopped Carrots
- 1 large red onion, coarsely chopped
- 1 small White onion, coarsely chopped
- 1 head celery coarsely chopped
- 1 head garlic peeled and coarsely chopped
- 1 small head Savoy cabbage coarsely chopped
- 1 handful Swiss chard
- ½ cup Chopped parsley
- 1 jar Coppola’s Tuscan Sauce
- 1 small can cannellini beans
- 1 cup boiled chicken
- 1 pinch Chopped Thyme
- 1 pinch Oregano
- 1 pinch black Pepper
Method
In a large pot pour in the olive oil and put on high heat. Add the garlic and onions. Let simmer for a minute. Add the carrots and celery, and let simmer for 5 minutes, stirring occasionally. Add the cabbage and Swiss Chard and let simmer for a few more minutes. Add the tomatoes, beans and spices. Let simmer for a few minutes. Add all the remaining ingredients. Let it come to a boil then let simmer for 10-15 minutes on Medium heat until all the vegetables are tender stirring occasionally. Serve with a nice loaf of crusty Italian bread and fresh grated Regianno Parmagiana cheese.
