Coppola’s Tuscan Sauce is a splendid addition for your meal. Outstanding by itself with rigatoni or add ground meat for a Bolognese, Coppola’s Tuscan Sauce is sure to please everyone.

Tuscan sauce is made from a blend of crushed plumb tomatoes, carrots, celery, onions, garlic and spices simmered with extra virgin olive oil to release their flavors. Originated in Northern Italy, Tuscan sauce is chunky rich sauce made for thick pasta such as rigatoni and fettuccine that tends to hold the sauce better.

The base of Tuscan sauce is a soffrito, an assortment of aromatic and flavorful vegetables such as garlic, celery, onions, and carrots fried in olive oil. Next, tomato paste and plumb tomatoes are added, along with a spices. The Tuscan sauce is stirred and then simmered gently until the vegetables break down.

Wine Pairings

Merlot, Merlot Indian Wells Columbia Valley , Washington State

The Indian Wells Merlot offers ripe berry fruit aromas and jammy flavors typical of Wahluke Slope reds. This is a full bodied style of warm climate Merlot with a round, supple finish. We added Wahluke Slope Syrah to enhance the mouth feel and rich fruit character.

Pinot Grigio, Ecco Domani Pinot Grigio, Italy

The grapes for this wine were gently crushed and pressed, and the juice was allowed to cold settle prior to fermentation in upright stainless steel tanks for three weeks at an average temperature of 64°F. The wine was aged sur lie for two months and then on light lees until bottling to preserve a clean and full mouthfeel. Ecco Domani Pinot Grigio offers light citrus and delicate floral aromas, tropical fruit flavors and a crisp, refreshing finish.

Sauvignon Blanc Collio, Mario Schiopetto, Italy

Shows aromas of apricot, lemon and apple. Full-bodied and long, offering a superlively palate of fresh acidity and gooseberry, with hints of lemon peel. A crisp, steely style.

Syrah Dry Creek Valley, Unti Vineyards Chianti, Sonoma Valley

This medium to full-bodied wine is a personal favorite because it strikes a great balance between Old and New World Syrah. The complex set of spicy and floral aromas are followed by sweet blueberry and blackberry flavors. This well-balanced wine will have you thinking of a Syrah grown in a cooler climate than the Dry Creek Valley, which is, well, cool.
